{"id":129,"date":"2026-04-02T17:55:37","date_gmt":"2026-04-02T16:55:37","guid":{"rendered":"https:\/\/safetyeddie.com\/?p=129"},"modified":"2026-06-10T17:56:03","modified_gmt":"2026-06-10T16:56:03","slug":"the-haccp-interpretation-nobody-asked-for","status":"publish","type":"post","link":"https:\/\/safetyeddie.com\/index.php\/2026\/04\/02\/the-haccp-interpretation-nobody-asked-for\/","title":{"rendered":"The HACCP Interpretation Nobody Asked For"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">During a food safety audit at a well-known supermarket bakery, I witnessed an impressive live demonstration of what I can only describe as <strong><em>alternative HACCP principles<\/em>.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A tray of freshly baked scones slipped from an employee&#8217;s hands and landed spectacularly on the floor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There was a brief pause. &#8211; A moment of reflection.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Then every single scone was carefully collected and placed on a lower shelf.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Five minutes later, they were all packed into paper bags and promoted as <strong>&#8220;4 for the price of 3.&#8221;<\/strong><\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"578\" height=\"1024\" src=\"https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1-578x1024.jpeg\" alt=\"\" class=\"wp-image-131\" style=\"aspect-ratio:0.5644588544079049;width:485px;height:auto\" srcset=\"https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1-578x1024.jpeg 578w, https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1-169x300.jpeg 169w, https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1-768x1362.jpeg 768w, https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1-866x1536.jpeg 866w, https:\/\/safetyeddie.com\/wp-content\/uploads\/2026\/06\/Scones-1.jpeg 1155w\" sizes=\"auto, (max-width: 578px) 100vw, 578px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Now, I don&#8217;t recall seeing the <em>5-second rule<\/em> referenced in any HACCP guidance document I&#8217;ve ever read. Nor have I encountered a risk assessment category called <em>&#8220;probably fine.&#8221;<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Which leaves me wondering what drove the decision.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Was it a genuine belief that gravity has no impact on food safety?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Or was the prospect of explaining a several-euro loss to a supervisor simply more frightening than the microbiological hazards associated with floor-seasoned baked goods?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Either way, it was a useful reminder that food safety culture isn&#8217;t what&#8217;s written in the procedure manual.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>It&#8217;s what happens when a tray of scones hits the floor and nobody thinks the auditor is watching.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><\/p>\n","protected":false},"excerpt":{"rendered":"<p>During a food safety audit at a
